Paleo Nut Crusted Salmon

I love me some salmon for my din dins! Not only is it the tastiest darn fish on the market, but it packs many powerful punches to improve your health too. Got some fussy fish eaters staying with you? Convince them to chow down on their salmon by sticking smothering some nuts over these pink nutrient bombs. Thankfully, this nut crusted salmon recipe tastes delicious too,  because healthy food doesn't have to be bland. INGREDIENTS
  • 4 salmon fillets (approximately 180 grams each)
  • 1 tablespoon Dijon mustard
  • 1/4 cup pine nuts
  • 1/4 cup blanched almonds
  • 1/2 tablespoon coriander seeds, crushed
  • zest and juice of 1/2 lemon
  • 1 1/2 tablespoons extra virgin olive oil
  • small handful fresh parsley, chopped
  1. Preheat oven to 200 degrees Celsius.
  2. Place the salmon fillets skin side down on a lined baking tray.
  3. Spread each piece with a layer of mustard.
  4. To make the crust: grind the coriander seeds in a mortar and pestle.
  5. Chuck the almonds and pine nuts into a food processor and pulse a few times to a rough crumble.
  6. Put the nut crumble in a bowl and mix with the seeds and all the remaining ingredients.
  7. Press the mixture evenly on top of each fillet, sticking it to the mustard.
  8. Bake for 15 minutes.
