Paleo Baked Pesto Salmon

Packed with Omega 3's, Vitamin D and B12, along with other nutrient goodies, salmon is one awesome little dude. So because this generous little fishy has given so much, I thought I'd give back, by giving him a little makeover. Nothing drastic, just a little bit of pesto love.You could use any of my pesto recipes ( I used the Sundried Tomato and Basil in the picture). Just smear it on, bake it, and hey Pesto, you've got a gourmet meal on your plate. INGREDIENTS... 4 salmon fillets (approx 220 grams each) 1/2 quantity pesto (find recipe here) Preheat oven to 200 degrees celsius. Put the fish skin-side down on a foil lined oven tray and spread the pesto over the top side of the fish. Bake for 15 minutes (give it up to 20 minutes if you prefer it well done).   By Holly Purdy, InnerFight Foodie
