Paleo Baked Pesto Salmon

Packed with Omega 3's, Vitamin D and B12, along with other nutrient goodies, salmon is one awesome little dude. So because this generous little fishy has given so much, I thought I'd give back, by giving him a little makeover. Nothing drastic, just a little bit of pesto love.You could use any of my pesto recipes ( I used the Sundried Tomato and Basil in the picture). Just smear it on, bake it, and hey Pesto, you've got a gourmet meal on your plate. INGREDIENTS... 4 salmon fillets (approx 220 grams each) 1/2 quantity pesto (find recipe here) Preheat oven to 200 degrees celsius. Put the fish skin-side down on a foil lined oven tray and spread the pesto over the top side of the fish.
