Rise and shine! Hauling your arse out of bed is made easier when you know there’s an awesome brekky on the menu. This paleo chai spiced porridge is ready in a flash and will set you up nicely to Carpe the shit out of the Diem.
- 2 cups coconut milk
- 1/2 cup chia seeds
- 3 tablespoons flaxseed meal
- 1 tablespoon pumpkin seeds
- 1 tablespoon sunflower seeds
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- Pinch each: ground cardamom, ground cloves, nutmeg, sea salt
- Throw everything in a saucepan and mix well.
- Bring it to a simmer over a low-medium heat while stirring.
- Simmer for 4-5 minutes until thickened.
spoon into bowls and top with whatever you fancy, I’m flexible like that.
